Macaroon Biscuit – Nut Free

This is a different take on the macaroon. Basic as far as recipes go but oh so tasty. Kids loved these in the cafe.


  • 2 cups fine desiccated coconut
  • 3 Medium egg whites
  • 1 cup coconut palm sugar (or honey (I use half a cup or less - watch it does not get too wet - add a little at a time)
  • 1/4 cup raw cocoa
  • 1 pinch salt


1. Preheat oven to 180C
2. Line a baking tray with non stick baking paper
3. Place coconut, sugar and salt into a bowl
4. Sift cocoa into bowl and combine all the dry ingredients until well mixed
5. Add egg whites
6. Combine until egg whites are completely mixed in and the ingredients have come together into a nice big blob of yumminess
7. Using a teaspoon, scoop out enough to make a walnut size ball
8. Gently roll into balls
9. Place on tray, lightly flatten with your fingers or a fork
10. Bake for 15 minutes - the sides will start to crack slightly when done
11. Cool on the tray and enjoy
