A simple, affordable wonderful way to have breakfast.  You can eat this hot or cold.  For the cooler months – I blend it all down, bring it up to a gentle simmer on the stove top and serve with a drizzle of honey and some fresh, local, organic cream.  It is delightful.  Good food that just happens to be gluten-free and grain-free. xxx Tania

Pecan/Almond Porridge

This is a super quick breakfast to make. Soak the nuts overnight and have a small blender or food processor on hand.

Ingredients

  • 1/4 cup pecans/almonds
  • 2 cups water (for soaking)
  • 1/4 cup water (for blending)
  • 1 tablespoon yoghurt
  • 1 handful fruit

Method

1. Soak pecans/almonds overnight in 2 cups of water (see recipe note)
2. Drain and rinse well in the morning and pop into your blender/food processor
3. Add 1/4 cup of water and process until it becomes creamy
4. Place in your breakfast bowl and there are no limits to what you can do with this breakfast

Note

If you don't get time to soak the pecans/almonds, don't worry - blend them down with the same quantity of water and enjoy.

You can add:
- A dash of fresh cream/yoghurt (or both)
- Sliced banana or a handful of berries of your choice
- A dash of honey
- A sprinkle of cinnamon
- A sprinkle of sesame seeds, pumpkin seeds and sunflower seeds (toasted is always much nicer)
- Mango is wonderful
- Grated apple makes it taste like a pecan and apple pie
