This is awesome food.

  • 1 cup of sunflower seeds soaked in lots of water overnight, rinse and drain well the next day and set aside
  • Chop up a big bunch of parsley – as much as you like
  • Slice up some lovely crunchy snow peas – I only grab a handful from the markets cause they can be pretty expensive
  • Moosh in an avocado or 2
  • Juice of 2 lemons
  • a BIG slug of olive oil (I end up using about 1.4 cup) – don’t be shy
  • Handful of mint ripped up and thrown in
  • Pinch of salt and some lovely pepper
