Sweet Potato Masala

This is just one of those wonderful meals on its own or piled onto a small chickpea flatbread and served with some yoghurt.


  • 500g sweet potato (orange) (peeled and cut into bite sized pieces)
  • Few thin slice fresh ginger (finely chopped)
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 1/2 teaspoon garam masala
  • 1 green chilli (de seeded and finely chopped)
  • 1 splash olive oil (enough to cook spices)
  • 1 cup water


1. Heat oil in a fry pan on medium, add ginger, coriander, cumin, garam masala and chilli
2. cook for a few minutes to release flavours
3. Add the sweet potato and 1 cup of water to the pan and bring to the boil
4. turn down to a simmer
5. Cover and cook until the sweet potato is tender and almost breaking up
6. If there is any liquid left in the pan, let it evaporate
7. Season with salt and pepper
